Cheeseburger Egg Rolls

IngredientsEgg Rolls:
1 lb ground beef
½ medium yellow onion, minced
1 Tbsp vegetable oil for cooking
Salt and fresh cracked black pepper
5 slices American cheese
½ cup diced pickles
13-14 egg roll wrappers
1 egg white
Oil for frying
Sauce:
¼ cup mayo
1 Tbsp tomato paste
1 garlic clove, pressed
1 tsp paprika
Salt and fresh cracked black pepper


Instructions1. Preheat a medium cooking pan over medium heat. Add a tablespoon of oil and minced onion. Saute until onion is translucent.
2. Add ground beef to the pan and break it up as much as possible. Season with some salt and pepper, cover and cook until meat starts to brown. Stir well and make sure to keep breaking up all the meat clumps as it cooks. Drain off all the juices and place cooked meat into a mixing bowl.
3. Break up cheese and add it to the bowl. Mix until all the cheese is melted and evenly incorporated. 4. Stir in pickles.
5. Heat up oil to about 350 degrees as you roll the egg rolls.
Gently whisk egg while and set it close to you.
6. To roll the egg rolls: place egg roll wrapper on a diamond. Spread about 2 tablespoons of cheeseburger filling in a line, leaving about an inch on each side. Gently and carefully, fold the corner that's closest to you over the cheeseburger mixture, and tuck under the filling. Fold both side corners toward center of wrapper, it will start to look like an open envelope. Dip your fingers in egg white and run it along the edges of the wrapper to seal better. Carefully roll up the egg roll.
7. Fry egg rolls in batches until golden brown, turning once the bottom side turns golden.
8. Whisk all ingredients for the sauce until completely incorporated. Serve with egg rolls.

OREO CHEESECAKE BITES

Note: Prepare to make this everyday after you make it because they are addicting. I have never made cheesecake anything before this. It isn't like your traditional cheesecake where you would need the pan. Ingredients: 36 OREO Cookies, divided 1/4 cup butter or margarine, divided 4 pkg. (8 oz. each) of cream cheese, softened 1 cup sugar 1 cup sour cream 1 tsp. vanilla 4 eggs 1/2 pound (8 oz) chocolate candy coating  1. Preheat oven to 325°F. 2. Line a 13x9" baking pan with foil, with ends extending over sides. Finely crush 24 cookies (I placed them in a food processor and crushed them finely). Melt 1/4 cup butter; mix with crumbs. TIRAMISU

Ingredients: 500gr Mascarpone cheese (approx. 1 lb.) 6 pasteurized eggs 2 packages savoiardi lady fingers 3 Tablespoons sugar 2 shots Cognac or Brandy (2 oz)* 6 cups coffee, espresso sized cups (about 8 oz) 4 Tablespoons powdered unsweetened cocoa. * I substituted the alcohol with vanilla extract Directions: Bring all ingredients to room temperature. Make the espresso and poor it into shallow flat-bottomed bowl. Add one shot of cognac, one teaspoon cocoa, and allow to cool to room temperature.Separate egg yolks and whites. In the first mixing bowl, beat egg yolks and sugar until creamy white. Add mascarpone and 1 shot of cognac and mix until blended. Leave this mixture in the bowl.In the second mixing bowl, beat eggs whites until fluffy. If you use pasteurized eggs, this may take a while.Fold beaten egg whites into mascarpone mixture.
