Ingredients
8 oz cooked chicken
1/4 cup each: sliced red grapes, small-diced red onion, small-diced celery
1/4 cup Italian parsley, chopped
1 tbsp. fresh tarragon, chopped
Shred chicken and mix everything together
Herb Aioli
1/2 cup mayo
1 tbsp. Dijon
1/2 tsp. tabasco
1/4 cup each: parsley and tarragon
1 tsp. minced garlic
1 tbsp. chopped red onion
Puree all ingredients in a blender.
Topping
1 tbsp. blue cheese crumbs
1 tbsp. chopped walnuts
A little mixed greens
Construction
Mix 2 tblsps. of the aioli with the chicken salad ingredients Top two sliced, mixed grain bread with the salad. Top with blue cheese crumbles, walnuts, and the greens.
