Ingredients:
1/4 Cup red bell pepper, cut into 1/2 inch pieces
1 Small garlic clove, peeled
1/2 Jalapeno pepper, stemmed and seeded, cut into 1/2 inch pieces
1/2 Small red onion, peeled, cut into 1/2 inch pieces
1 Mango, peeled and pitted, cut into 1/2 inch pieces
1 1/2 Tablespoons fresh cilantro leaves
2 Teaspoons fresh lime juice
1 1/2 Teaspoons rice vinegar
1/2 Teaspoon honey
Directions:
Chop up all ingredients and transfer to a bowl. Stir in the lime juice, vinegar, and honey. Cover and let sit for 30 minutes to allow flavors to blend. If you don't use it right away put it in the fridge. It will taste the best when used the same day.
