Ingredients:
1 Pounds potatoes
2 Tbsp. olive oil
1 Tsp. rosemary
1/4 Tsp. salt
1/4 Tsp. pepper
4 Tomatoes
1/2 Cup olives
3 Cloves garlic
1/4 Cup Parmesan cheese
Directions:
1. Preheat oven to 450. Lightly grease baking pan; place potatoes in pan. In a small bowl, combine oil, rosemary, salt, and pepper; drizzle over potatoes, tossing to coat.
2. Bake for 20 minutes, stirring once. Add tomatoes, olives, and garlic, tossing to combine. Bake for 5 to 10 minutes more or until potatoes are tender and brown on the edges and tomatoes are soft. Transfer to a serving dish. Sprinkle with Parmesan cheese.
